I've Got Sunshine On A Cloudy Day

I don't know what is happening with the weather lately! I blame global warming...

Yesterday was 88 degrees as I was driving from Santa Cruz to Santa Barbara.  Today it is in the low 60s and full of grey skies.  This calls for a cozy day followed by a cozy dinner :)

On tonight's menu we're having (and by we I mean me) couscous topped with sauted veggies and tomato basil Italian sausage (vegan style). I needed some color to liven up my grey day. 

First, I cut and sauted all my veggies in EVOO.




The bowl was a great addition to the colorful theme :) Thanks Emily!

Then I made couscous, grilled my Tofurkey Italian Sausage (my new fav), and mixed in Tomato Basil Marinara.
